Our Edna Valley Vineyard Cabernet Sauvignon has ripe blackberry flavors complemented by hints of cedar, anise and cocoa powder. A firm acidity and fine tannins create a long finish that lingers.
NOTES FROM THE WINEMAKER:
Paso Robles has a history of providing deeply concentrated Cabernet grapes with rich, dark flavors and a sliver of distinct acidity. For this reason, we continually return to this AVA for our Cab grapes. The 2014 vintage had warmer temperatures than usual leading to an early harvest. Wines from this vintage will develop beautifully with age. After an early morning harvest, we fermented slowly in the winery with multiple daily pump-overs to extract color and flavor. Once fermented to dryness, we pressed the must lightly and completed malolactic fermentation for a soft, round mouthfeel. This wine was then blended and aged for an average of six months on French oak.
